These mini twice baked potatoes are sure to be a hit when you serve them at your next party! You can prep them ahead of time and the recipe is easy to double if you need more than 12.

Mini Twice Baked Potatoes

Ingredients for 12 Servings

    Potatoes, small
  • 2 Tbs
    Cream cheese, softened
  • 3 Tbs
    Sour cream or Greek yogurt
  • 1/2 cup
    Bacon, cooked and crumbled
  • 2 Tbs
    Chives, chopped
  • 1/2 cup
    Shredded cheddar cheese
  • 1/2 ts
  • 1/4 ts

  1. Preheat oven to 400 degrees. Drizzle potatoes with olive oil and salt.
  2. Bake potatoes for 25-30 mins until for tender. Allow to cool for about 20 minutes or until cool enough to handle.
  3. Slice off just the top of each potato and scoop out the insides with a melon baller.
  4. Place scooped out potato in a bowl. Mash with cream cheese, sour cream, half the cheese and half the bacon, 1 tablespoon chopped chives until smooth.
  5. Fill the potato shells with the mixture. Bake at 350 degrees for 15-20 minutes until warmed. Top with remaining cheese, bacon and chives. Bake for an additional 5 minutes.
