Hummus is out, and feta is in! This bright, tangy dip is a delicious pair to some roasted artichoke hearts, vegetables, and pita.

Ingredients for 4-5 Servings

  • 8 oz
    feta cheese, crumbled
  • 1/3 cup
  • 1/3 cup
    sour cream
  • 1 tbsp
    lemon zest
  • 2
    cloves of garlic, minced
  • 1 tsp
  • 1 tsp
  • 1/2 tsp
  • 1/2 tsp
  • 1/2 tsp
  • 1/2 tsp
    red pepper flakes
  • 2 cans
    artichoke hearts
  • Olive oil
  • Paprika (optional)
  • Fresh thyme (optional)
  • Parmesan cheese (optional)

  1. Preheat the oven to 275 degrees. Cover a large baking sheet with parchment paper and set aside.
  2. Drain and pat artichoke hearts dry. Toss in olive oil, ½ tsp salt, and ½ tsp pepper, then lay out on the baking sheet. Cook for 15-20, until golden brown on each side.
  3. In a large food processor, add feta, mayonnaise, sour cream, lemon zest, garlic, salt, pepper, dill, thyme, oregano, and red pepper flakes and blend until smooth.
  4. Place in a medium-sized dish and garnish with olive oil, paprika, fresh thyme, and parmesan.
