  • Oatmeal Crust
  • 1 1/2 cups
    Rolled oats
  • 1 1/2 cups
    Almond flour
  • 1/2 tsp
    Sea salt
  • 1/2 cup
    Maple syrup
  • 1/3 cup
    Coconut oil
  • 1 tsp
    Lemon Juice
  • Strawberry Filling
  • 3 cups
    Sliced strawberries
  • 1/4 cup
    Maple syrup
  • 1 tbsp
    Lemon juice
  • 1
    Lemon zest
  • 1 pinch
    Sea salt
  • 1-2 tbsp
    Corn starch

Method

  1. Press the oatmeal mixture into the 8×8 pan covering the bottom creating the crust layer. Top with all the strawberry filling. Then use your hands to crumble the remaining 1 cup of oatmeal mixture on top.
  2. Bake in the oven for 25 mins or until oatmeal is golden brown. Allow to cool completely in the refrigerator before cutting. Store covered in the fridge. Will be perfect for breakfast, desserts or even a snack for a few days.
